Ingredients
1. 1 cup powdered sugar
2. 1 cup refined flour/ wheat flour
3. 1 egg
4, 1 cup shredded coconut
5. 1/4th cup coconut milk
6. 4 drops of vanilla essence/ coconut essence
7. 1 teaspoon baking powder
8. 1/2 cup butter
Method
1. Whisk the butter add sugar followed by egg
2. Once combined add flour gradually with coconut
3. If the batter is thick add coconut milk till a semi thick batter is reached
4. Add the essence and baking powder
5. Microwave the cake for 4-5 minutes (take the toothpick test)
6. Serve with berries or ice cream
